This traditional Greek Peasant Salad is a delicious salad to enjoy in the summertime. It's a great way to use garden fresh tomatoes!

What is a peasant salad?

The peasants inspired the Greek peasant salad in Greece. Horiatiki means from the village or peasant in Greek.

First, make the simple vinaigrette.

Add the red wine vinegar, extra virgin olive oil, and dried oregano to a small bowl and whisk until combined.

Add vegetables, herbs, and feta cheese.

Add the grape tomatoes, cucumber, chopped basil and parsley, olives, and feta cubes to a large bowl.

Pour the vinaigrette over the vegetables

Pour the vinaigrette over the vegetables and toss them together. Add salt and freshly ground black pepper to taste. Serve immediately.

Serve Greek salad with grilled chicken, steak, or fish. Or simply eat with pita or naan bread and hummus.
