Heat the olive oil in a large non-stick skillet over medium-high heat. Next, add the chopped sweet potatoes and stir to coat in oil. Cook for 4 minutes.
Stir in the chopped onion and bell pepper and cook for 8 minutes, stirring only once or twice.
Then, allow the onion and sweet potato to brown.. Reduce the heat to medium and add the garlic, salt, black pepper, chili powder, and paprika.. Saute for 4 minutes.
Then, cover the skillet and cook for 5 to 8 minutes until the sweet potatoes are tender.
