Hello everyone! I’m Veronica! 

Hey there! I’m Veronica Thompson, the creator of Nosh Nourish Wander. Here are some fun facts about me! I have been a Registered Dietitian since 2002 and have worked mostly in hospitals and clinics. My areas of expertise include transplant nutrition, diabetes, and gut health. In addition to nutrition, I love food! Whether creating new recipes, writing my food and nutrition articles, food photography, or just exploring new cuisines and restaurants, food is on my mind 24/7.

In 2018, I created this blog to help you feel inspired to cook healthy foods, improve your health, and learn more about nutrition. Since learning about my diagnosis of IBS in 2022, I’ve had to learn how to eat to improve my symptoms. And this means I’ve had to create new recipes that taste good and help me feel my best.

My mission is to create more gut-healthy and low FODMAP recipes and provide gut health nutrition information that will empower you to feel your best. Some of my favorite recipes are: 

Also, since travel is one of my passions, I will share some of my favorite travel destinations from time to time. Travel feeds my soul, and it makes me feel good to share my experiences with you.

Here are some fun tidbits about my travel experience. In 2007, I lived abroad in Vietnam and traveled across Southeast Asia and Europe. To read more about this experience, read How to Travel and Teach English Abroad.

I also love to hike and be in nature! And some of my favorite travel experiences have been hiking in the Smoky Mountains and Zion National Park! I’m always looking forward to my next destination and all the unique experiences I will have. 

Learning about different cultures, meeting new people, learning some phrases of the local language, and eating the local cuisine are some of the best things about traveling. This blog combines my love of all three: Food, nutrition, and travel, or in other words, Nosh, Nourish, and Wander!
